Abstract

The agricultural, agroindustry and food industry generate huge amounts of plant wastes that are underutilized. Plant wastes consist mainly of cell wall. Depending on the type of material, cell wall from dicots can contain high amounts of pectin. Pectins are polysaccharides used as food additive. This chapter discusses the potential of cocoa pod husk, coffee pulp, soybean hull and grape pomace to be used as new raw material for pectin extraction.
