Abstract
The aim of this chapter is to (a) to evaluate the effect of the Covid-19 pandemic on the elements that define the way that small family-owned hotels change their operations and develop innovation and (b) to propose specific strategic actions that will guide the management of small family-owned hotels to respond positively to the challenges posed by the pandemic. This research, through three consecutive research rounds, collected quantitative and qualitative data from a team of experts with extensive experience and expertise in the hotel industry. The experts emphasized that because of Covid-19 the small family-owned hotels have (a) forced to transform into flexible organizations that can adapt and survive in the new reality, free from the previous way of thinking and (b) realize the value of innovation in their development, although many of them are not yet ready to invest in it because they are reluctant on taking risks and seek immediate profit. The originality of this research lies in the knowledge gap that bridges, since previous studies have investigated the impact of COVID-19 on hotel companies and have proposed strategies to address it, but none, using the Delphi method, have assessed the impact of the pandemic on the way that small family-owned hotels change the way they operate and develop innovation.
