Abstract
The discovery of first known sweetener called honey, was done by man while roaming forest in search of food. Honey was found to be made by bees from the collection of flowers nectar. The main constituents of honey are levulose, dextrose, water, minerals annexed with little sucrose [1, 2]. Longing of man for honey was depicted by human figure collecting honey from the nest of bees at ‘‘Cuesde la Arana” Cave Bicore, Spain as early as 7000 BC [3, 4]. Evidence for its use as sweetener from ancient Indian literature Rig Veda (about 6000–10,000 BC) [5], Sumerian clay tablets and from Egyptian tomb drawing probably support the existence of apiculture practice as early as 2000–4000 BC [4–6]. Honey is still used as source of sweetener as replacement of sucrose in the distant rural areas of USSR [7].
