Abstract

Enzyme technology is one of the most important areas of modern biotechnology and involves numerous disciplines of natural sciences. It is a highly interdisciplinary field, which from the beginning until today could only be further developed through integrated interdisciplinary research. This chapter provides an introduction, starting from the fields of work, through the historical development, a classification of biocatalysts to industrial applications.
