Abstract

Recent trends and consumer insights suggest that the market for gluten free products will continue to rise globally. The technological advancement with reference to the gluten detection method will help to create the global awareness of the celiac disease and this would bring the radical change in the market as well the rise of demand among the consumers. This chapter aims to disucss the insight of gluten free market.
