Highly esterified pectinic substances were isolated from bean (P. vulgaris) shells. Their monosaccharide composition was established. Their physicochemical parameters were determined. The pectin main chainwas shown to be a galacturonan with α-1,4-glycoside bonds between galacturonic acids.
