FormalPara DefinitionGlykohydrolase der intestinalen Bürstensaummembran, die unter Freisetzung von Glukose die Hydrolyse der α(1–4)-glykosidischen Bindung vom nicht reduzierenden Ende von Amylose, Amylopektin, Glykogen und Maltose katalysiert.
FormalPara BeschreibungMaltase (EC 3.2.1.20) (Molmasse ca. 335 kDa) ist eine membranständige Glykohydrolase der intestinalen Bürstensaummembran insbesondere von Duodenum und Jejunum. Das Enzym besteht aus 2 Untereinheiten mit jeweils ähnlicher, vermutlich jedoch nicht gänzlich identischer katalytischer Aktivität.
